  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 3 cloves garlic, minced

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons tomato paste

  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

  1. In a large skillet or pot, heat coconut oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.

  2. Add minced garlic and grated ginger to the skillet. Cook for another 1-2 minutes until fragrant.

  3. Stir in diced red bell pepper, zucchini, and cauliflower florets. Cook for 5-6 minutes until the vegetables are slightly softened.
